What about the grilled potatoes and the meaty texture and taste of eggplant and mushroom that can be turned into yummy burger and can also be served in pasta? Each vegetable offers a taste that is earthly flavorful. Don’t just think all of them are bitter because they can also be sweet. Whether it’s a simple stir-fry with a medley of colorful vegetables, a hearty vegetable soup brimming with flavor, or a creamy vegetable pasta, the possibilities are endless. And don’t forget the power of herbs, spices, and sauces that further elevate these vegetable cuisines.  It will make you drool on the dishes where the vegetable is the protagonist and the one that brings vibrant aroma to the dish served on the table.

Green Goodness

It is not unknown to the world of humans that eating vegetables can increase your lifespan. Speaking of longevity, according to health experts at WebMD, eating vegetables daily is highly recommended. Although a combination of meat consumption and exercise is beneficial for overall health, it is not a perfect fountain of youth. Vegetables have rich nutrient content and a low-calorie profile. Packed with vital vitamins, minerals, and antioxidants, vegetables offer numerous health benefits, including heart health and a good source of dietary fiber.

#MeatlessMonday

The “Meat Free Mondays” campaign has generated a lot of buzz since its creation in 2003. American marketing professional Sid Lerner founded this international campaign to promote the consumption of vegetables for improved health.

The said campaign is not to ban meat every Monday. The University of Colorado underscored that Meatless Monday is a movement “to reduce” the meat consumption one day for personal and planet’s health. Yes, you read it right. Meatless Monday is not just about human health, but it also considers the well-being of Earth. The University of Colorado said the meat industry uses large amounts of fossil fuels, water which is 1850 gallons of water are needed to produce a single pound of beef compared to the 39 gallons of water per pound of vegetables. It could also cause biodiversity loss. Lancaster University stated that 30% of biodiversity loss is linked to livestock production. This loss is caused by deforestation and land conversion to create more grazing space for commercial farming.

The Meatless Monday movement, which is observed in over 40 countries and in public schools in countries like Brazil, Ireland, and Belgium, was established to address this issue. The said movement is like a campaign established During World War 1 and 2, called the Meatless Tuesday. It was promoted across America to encourage families to reduce consumption of key staples to support the war effort and avoid rationing.

In the religious aspect, this movement is similar to the tradition on the Greek island of Crete, where eating legumes on Monday is a long-standing practice that prohibits the consumption of meat. This tradition aligns with the religious observance of Clean Monday in Greece, marking the start of Lent and emphasizing purity through abstinence from meat.

The choice of Monday for the Meatless Monday movement has both practical and symbolic significance. In Catholic and Orthodox Christian traditions, Wednesday and Friday are usually designated as fasting days, making Monday the first workday of the week – a fitting day for a campaign named Meatless Monday. Additionally, the alliteration of “Meatless” with Monday, like the naming conventions of other day-specific campaigns like Taco Tuesday, may have played a role in the selection of Monday for this initiative.

However, regardless of what day it is, eating vegetables is fun to eat.  There are a lot of green dishes that you can enjoy while you are in the comfort of your home.
