Lechon: From Festival Star to Everyday Delight

Lechon: From Festival Star to Everyday Delight

In every Pinoy’s big celebration, one dish always steals the show—- the all-time favorite, lechon.

This delicious roasted suckling pig is roasted through a lump of open coal allowing the skin to develop a delightful crackling and crispy texture ( caution: be wary of overeating its skin or you’ll excite your high blood) while ensuring the meat inside remains tender, juicy, and moist.

On June 24, the Philippines will celebrate its religious and cultural festival, the Lechon Festival in Balayan Batangas. It is celebrated in honor of St. John the Baptist.

However, even if you are not in Batangas to see the parade of lechons or just an ordinary day for you, you can still treat yourself to any delectable dishes of lechon. Furthermore, you can enjoy eating this roasted pig in the comfort of your home or wherever you are at the moment.

Here is a list of some Filipino delicacies that are made even more delicious with the addition of Lechon.

1. Lugaw with Lechon Kawali

The glutinous rice porridge or lugaw in Tagalog is one of the most popular dishes in the Philippines served in food stalls, carenderias, or even in restaurants any time of the day. It is topped with meat, boiled egg, or sometimes innards of poultry, pig, or beef.  But it reaches its height of delight when mixed with lechon kawali (a crispy deep-fried pork). For just 99 pesos, you can savor this delectable dish at Lugaw Pilipinas in Cubao.
